Changes proposed

Some small adjustments to how we connect to and setup the connection to OpenSearch in preparation to work with AWS

Context for reviewers

This hasn't quite been tested yet because we don't have anything in AWS to test with, but at least locally it works still as expected.

This is currently just following the recommended approach from the docs: https://opensearch.org/docs/latest/clients/python-low-level/#connecting-to-amazon-opensearch-serverless
