It would be great to add a new entry to the "Gallery of JupyterHub Deployments" in the JupyterHub documentation:

https://jupyterhub.readthedocs.io/en/stable/gallery-jhub-deployments.html

Something that could be done at some point in the future once things have matured a little bit more.
