Where package info: name, version and size is shown, the last update date can also be added. It can help in deciding which package to install.

I'm not sure if this would be easy, because you would need to know when the version was released, and you can't really get that, unless you would like go to the GitHub page and extract when was the version released.

For Flatpak applications it is quite useful since they receive constant updates.
I guess it's not difficult to implement (I don't know, I'm not a developer), Gnome, KDE, and Elementary have this functionality in their app centers.

Discover in plasma has this feature, I think they use an api to pull the information from the flathub website i guess. Someone that understands code more than me cold take a look on how Discover does it.
All I am sure of is that the flatpak cli tool has no option to pull that info.
EDIT:
The gnome software app that im not sure what the name is also has this "additional" information when searching for flatpaks
